This oatmeal cookie recipe comes from our first 1980’s Ohio Art Flower Recipe Box. Oatmeal cookies are always tasty, and this one seems like a pretty simple recipe to make.
I am calling this Pat’s Oatmeal cookies recipe, even though we of course don’t know who Pat is, simply because the top of the recipe card says Pat in the upper left corner.

Cross referencing this recipe, we can make a pretty safe bet it’s not really a completely original recipe, but at the same time we weren’t able to find any recipes quite exactly like it either!
The main ingredients of this recipe include sugar, egg whites, margarine, oats, flour, and vanilla. The back of the recipe card suggests one could add in chocolate chips or nuts.
I don’t use margarine because I am a butter enthusiast, so I substituted the margarine with butter. They are usually both pretty interchangeable and just depends on your own preferences.
I have a TON of oats I have been wanting to use up for awhile now, so I am definitely going to be making these cookies often!

Most of the oatmeal cookie recipes I’ve tried in the past use brown sugar, while this one only uses regular granulated sugar. This one only using the egg whites is also something different that I’ve seen in other cookies.
And I definitely think I will add chocolate chips to these cookies! I will post pictures as soon as I bake them!
Oatmeal Cookie Recipe from Pat
Ingredients
- 2 cups oats
- ¼ cup flour
- ½ cup margarine or butter {melted and cooled}
- ¾ cup sugar
- 2 egg whites stiffly beaten
- ½ teaspoon vanilla extract
Instructions
- Stir together oats, flour, margarine and sugar. Fold in egg whites.
- Drop by teaspoon on greased cookie sheet.
- Bake at 350 degrees F for about 12 minutes.
