The ingredients for this snazzy zucchini recipe are also pretty simple:
- 1 pound hamburger meat
- 1 medium onion
- 1 envelope spaghetti sauce seasoning
- 1 cup precooked rice
- 3 cups grated zucchini
- 1 can tomatoes
- 3/4 cup water
- salt
Most of these things you probably have on hand already, so like I said it is a great recipe for busy weeknights – especially when zucchini is in season.

How to Make Snazzy Zucchini
This recipe is pretty easy to make. First, you brown the ground beef with onions. Then you add in tomatoes, water, salt, and seasoning. Lastly, you add in the rice and zucchinni and let it simmer for about 35-40 minutes.
You may notice this recipe calls for precooked rice. You can cook rice in the microwave, or if you use instant rice, you could probably do away with cooking it all together and just letting it cook while the mixture simmers on the stove top.
Snazzy Zucchini One Pot Weeknight Dinner Recipe
Ingredients
- 1 pound ground beef
- 1 medium onion diced
- 1 envelope spaghetti sauce seasoning
- 1 cup precooked rice
- 3 cups grated zucchini
- 1 can of diced or crushed tomatoes {16 oz size}
- ¾ cup water
- 1 tablespoon salt
Instructions
- Mix beef and onion in skillet until brown.
- Mix in water, tomatoes, spaghetti seasoning and salt.
- Bring to a boil.
- Stir in rice and zucchini.
- Simmer for 35-40 minutes and serve.
